BIG EASY KOMBUCHA

Okay everyone, let’s talk Kombucha. Anyone know what this is? I know, right, it’s a funny word, LOL. Long story short, it’s a fermented fizzy tea with a plethora of health benefits (contains antioxidants, can kill bacteria, great for digestion, preventing heart disease and diabetes etc..) and the list goes on and on.

For all those Kombucha fans out there, I have some great news that’ll make your summer just a little bit brighter. Big Easy Bucha has made it’s way to Costco. Now isn’t this the best thing since shoe strings, lol 😂. I’m excited because I’ve partnered with Big Easy Bucha to spread the word about it’s debut at Costco and boy these are the tastiest flavors in town. Obviously my fav is the Big Easy Bucha Magic Melon, hubby loves the Bayou Berry, so I guess we are all #winning here. Big Easy Bucha is straight out of New Orleans, this company serves over 10 different tasty flavors to shock your tongue and kickstart your day. Not gonna lie, I don’t have a Costco membership, but now I’m strongly considering since this special beverage has made it’s way to the Costco shelves. Also not gonna lie when I say this is definitely an acquired taste, but you know what, I’m all about eating and drinking what’s good for me. I also balance it out with a nice size portion of sweets and snack food, LOL. For those who follow me on IG, you know what I’m talking about. Recently it was a quick run to Krispy Kreme, LOL. #thisisanojudgezone also a #noflexzone. LOL.

Aside from all the benefits of Kombucha, I love that I’m able to substitute this beverage for coffee every now and then. I feel energized with this and don’t get that afternoon crash like most coffee and energy drinks do to you around 2PM or 3PM at work. Don’t you just hate that? I do.

Kiddos are more than likely in Charlie and I’s future so making some food and beverage changes is a must and I might as well start now because you definitely can’t kick some habits over night. All that being said. Kombucha is the bees knees in my book. Confession, this was my first stab at Kombucha and my very first visit to Costco and I gotta say they don’t disappoint. It’s definitely my new favorite refreshing, fizzy beverage for the summer.

EASY SWEET POTATO RECIPE

Peel skin off sweet potatoes and rinse thoroughly
Set them in pan out of the way
Cut sweet potatoes into 1 in cubes or smaller
Set cut potatoes in pot of water
Do one last rinse. Setting potatoes in water helps soften them and take off any excess skin or dirt.
Mix in Ginger, Brown Sugar, Vanilla Extract, Nutmeg and Cinnamon in pot of butter
Stir mixture and bring mixture to a boil
Preheat oven to 400 and set rinsed sweet potatoes in pan. Sprinkle cinnamon on them and add butter and spice mixture and stir till potatoes are covered in mixture.
Cover potatoes with foil and bake for 50 minutes
Sweet potatoes should be soft and mixture sticky. If potatoes are not as soft as you’d like,place foil cover back on pan and bake for additional 15 minutes.
Optional: Cover baked potatoes with marshmallows and bake for 10 minutes or until marshmallows melt or are lightly browned.

In the mix of all the shenanigans that took place this weekend, I managed to cook up over 6 lbs of sweet potatoes for a church event. Sweet potatoes are a major part of my diet and one of my favorite sides. Aside from all the many health benefits of this delectable treat, you can eat them in so many different ways and they can be included with so many different meals. I have a major sweet tooth and fresh sweet potatoes are a go-to when I’m craving something sweet. I must admit though, this was tedious and exhausting. If you try this recipe hopefully your only cooking for a family of 4 or less. 🙂 I’m also hoping your knives aren’t as dull as mine.

I decided to make baked candied yams. This side can pretty much be paired with any dinner or lunch meal and can easily be modified for those who are looking to eat a bit healthier. If your looking to try this recipe without all the added calories, try replacing the butter with coconut oil and only add a bit of brown sugar and cinnamon to taste and opt out on the marshmallows.
